Something New for Turkey Leftovers and St. Patty's Day

After you have had your Thanksgiving in March you might find yourself with the after Thanksgiving dilima of leftover turkey.  Our solution to this: make a shepherd's pie.  Yes, we know that the traditional shepherd's pie consists of ground beef and is topped with white mashed potatoes but if you swap the beef for turkey and top it all off with mashed sweet potatoes you might find a new post-Thanksgiving or St. Patty's Day tradition. 

Ingredients:
2 lbs shredded turkey
3 carrots thinly sliced
2-3 onions diced
10 oz frozen peas 
2-3 sweet potatoes
1-1 1/2 c. shredded cheddar
milk or cream
4 TBSP butter (divided)
2 1/2 TBSP flour
2 c. stock (veggie, chicken, turkey...)
Salt and pepper

Directions:

In a large pot cook sweet potatoes in boiling water for approx. 15 minutes, until tender.  Drain, mash, and season with 2 TBSP butter, a splash of milk or cream, and salt/pepper to taste.  Set aside.

While the sweet potatoes are cooking, heat a Dutch oven over medium with approx. 2 TBSP olive oil.  Add onions and carrots and cook until beginning to soften.  Next add your leftover turkey

In a small pot melt 2 TBSP butter.  Add 2 TBSP flour and mix until well incorporated.  Pour in 2 c. stock and bring to a simmer.  Cook until the liquid thickens.  You might need to add more flour.  Once thickened, pour onto the turkey mixture and add frozen peas to the mix. 

Top with mashed sweet potatoes and cheddar cheese.  Bake at 425 for 5-10 minutes, until cheese is melted. 



So, next times you have copious amounts of turkey leftover and don't want the same old turkey sandwich give turkey shepherd's pie a try!
